A GOOD DAY TO DIG CARROTS. An old timer told me 20 years ago that the best way to overwinter carrots is in the ground (like parsnips). During the January thaw, I dig out enough to get us to spring, when I did the balance. At 45F, today qualified as a January thaw and I had good luck digging! CARROTS WAITING TO BE DUG. I always get a thrill when I push back the mulch straw, dig into the soft ground and uncover fresh carrots just waiting to be liberated. Today I dug about 12 lbs. We've been down to -30F this winter and yet, thanks to judicious mulching, I was able to dig these fresh carrots out of the ground in Maine today. #winter #veggies #Maine #carrots
