(Mediterranean) Spanish Rice w/Sofrito, Saffron, Chorizo and Chicken 

This classic dish starts with a sofrito of onions, garlic and fresh, peeled tomatoes and adds Bomba rice, hot paprika, homemade chicken stock, white wine, fresh bay leaves and homegrown oregano, bits of chicken and sliced chorizo.
